  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup canola oil
  • 2/3 cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups vegan butter, softened
  • 45 cups powdered sugar
  • 2 teaspoons pure vanilla extract
  • 1/41/2 cup unsweetened soy milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, mix soy milk and vinegar; let sit for 5 minutes. Add oil, applesauce, and vanilla.
  3. In another bowl, whisk flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Combine wet and dry ingredients until just mixed; then stir in boiling water.
  5. Pour batter into the pan and bake for 30–35 minutes until a toothpick comes out clean.
  6. Allow cooling before frosting with your choice of vegan buttercream.
