- 1 cup boiling water
- 1 1/2 cups vegan butter, softened
- 4–5 cups powdered sugar
- 2 teaspoons pure vanilla extract
- 1/4–1/2 cup unsweetened soy milk
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a bowl, mix soy milk and vinegar; let sit for 5 minutes. Add oil, applesauce, and vanilla.
- In another bowl, whisk flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Combine wet and dry ingredients until just mixed; then stir in boiling water.
- Pour batter into the pan and bake for 30–35 minutes until a toothpick comes out clean.
- Allow cooling before frosting with your choice of vegan buttercream.
