Ingredients
- 2 x 5oz cans of tuna, drained
- 1 medium onion, chopped
- 1/2 stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil, divided
- 1/3 cup shredded mozzarella cheese
- Sliced bread (your choice)
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, and mozzarella. Season with salt and pepper; mix until well combined.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Butter one side of a slice of bread and place it butter-side down in the skillet.
- Scoop about 2 tablespoons of the tuna mixture onto the bread while it’s browning. Butter another slice of bread and place it on top (butter-side up).
- Grill until the bottom is golden brown. Carefully flip the sandwich to grill the other side until golden brown.
