  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • 250 g mascarpone cheese
  • 240 ml heavy cream
  • Cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
  2. Melt butter and dark chocolate in a microwave-safe bowl in 30-second intervals until smooth.
  3. Stir in brown and granulated sugars until well combined.
  4. Add eggs one at a time, whisking each until fully incorporated.
  5. Fold in sifted flour and a pinch of salt until just combined.
  6. Pour batter into the prepared tin, smoothing the top, and bake for 25-30 minutes or until a toothpick comes out clean.
  7. While warm, poke holes in brownies and pour espresso shots over them; let cool completely before topping with mascarpone cream.
