Ingredients
- 14 to 16 ounces firm tofu
- 1/2 cup unsweetened nondairy milk
- 3 tablespoons nutritional yeast
- 6 large tortillas
- 12 slices vegan cheese
- 3 small avocados
- 4 cups chopped kale
Instructions
- Crumble the tofu into 1-inch chunks and set aside.
- In a bowl, whisk together nondairy milk, nutritional yeast, Dijon mustard, turmeric, paprika, garlic powder, onion powder, and kala namak.
- Heat olive oil in a nonstick skillet over medium-high heat. Cook the crumbled tofu for about 7 minutes until lightly golden.
- Pour the sauce over tofu and cook for an additional 2 minutes until heated through.
- Assemble each wrap with vegan cheese, avocado slices, sautéed kale, and tofu scramble. Fold tightly to secure.
