Description

Tomato Spinach Shrimp Pasta is a vibrant, Mediterranean-inspired dish that blends fresh shrimp, juicy cherry tomatoes, and nutritious spinach for a quick and satisfying meal.


Ingredients

  • 8 oz spaghetti (or preferred pasta)
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/2 cup chicken broth (or vegetable broth)
  • Grated Parmesan cheese for serving (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Boil water in a large pot. Add salt and cook spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil. Sauté minced garlic for about 30 seconds until fragrant. Add shrimp and cook until pink and opaque (3-5 minutes).
  3. Stir in halved cherry tomatoes and red pepper flakes; cook until slightly softened. Add fresh spinach until wilted.
  4. Pour in chicken broth and reserved pasta water. Toss in cooked spaghetti and mix gently. Season with salt and black pepper.
  5. Serve hot, topped with grated Parmesan cheese and fresh basil if desired.
