- 8 oz spaghetti (or preferred pasta)
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 4 cups fresh spinach
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1/2 cup chicken broth (or vegetable broth)
- Grated Parmesan cheese for serving (optional)
- Fresh basil leaves for garnish (optional)
Instructions
- Boil water in a large pot. Add salt and cook spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- In a skillet over medium heat, add olive oil. Sauté minced garlic for about 30 seconds until fragrant. Add shrimp and cook until pink and opaque (3-5 minutes).
- Stir in halved cherry tomatoes and red pepper flakes; cook until slightly softened. Add fresh spinach until wilted.
- Pour in chicken broth and reserved pasta water. Toss in cooked spaghetti and mix gently. Season with salt and black pepper.
- Serve hot, topped with grated Parmesan cheese and fresh basil if desired.
