  • 10 oz cherry tomatoes (halved)
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 34 garlic cloves (minced)
  • 3/4 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini in boiling salted water according to package instructions until al dente. Drain and rinse under cool water.
  2. In a large mixing bowl, combine the cooled tortellini with cherry tomatoes, mozzarella pearls, chopped spinach, basil, and minced garlic.
  3. Drizzle olive oil and balsamic vinegar over the mixture. Add Italian seasoning, salt, and pepper, then toss to combine.
