Ingredients
- 20 oz cheese tortellini (uncooked)
- 10 oz cherry tomatoes (halved)
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves (minced)
- 3/4 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini in boiling salted water according to package instructions until al dente. Drain and rinse under cool water.
- In a large mixing bowl, combine the cooled tortellini with cherry tomatoes, mozzarella pearls, chopped spinach, basil, and minced garlic.
