- 2 tablespoons sun-dried tomatoes (drained and julienne cut)
- 1 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 3 ounces baby spinach
Instructions
- Cook the spaghetti squash by piercing it several times and microwaving on high for 8–12 minutes until tender. Allow it to cool.
- Season the chicken with salt, pepper, and Italian seasoning. In a large skillet, melt 1 tablespoon of butter over medium-high heat and cook the chicken until no longer pink (about 7 minutes).
- Remove chicken from the skillet; add remaining butter along with garlic and shallot. Cook until softened (1–2 minutes), then add sun-dried tomatoes.
- Stir in heavy cream and bring to a simmer before mixing in Parmesan cheese and spinach.
