  • 1 medium spaghetti squash
  • 1 pound boneless, skinless chicken (cut into bite-sized pieces)
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 shallot (minced)
  • 2 tablespoons sun-dried tomatoes (drained and julienne cut)
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 3 ounces baby spinach

Instructions

  1. Cook the spaghetti squash by piercing it several times and microwaving on high for 8–12 minutes until tender. Allow it to cool.
  2. Season the chicken with salt, pepper, and Italian seasoning. In a large skillet, melt 1 tablespoon of butter over medium-high heat and cook the chicken until no longer pink (about 7 minutes).
  3. Remove chicken from the skillet; add remaining butter along with garlic and shallot. Cook until softened (1–2 minutes), then add sun-dried tomatoes.
  4. Stir in heavy cream and bring to a simmer before mixing in Parmesan cheese and spinach.
  5. Scrape strands from the cooled spaghetti squash into the sauce, combine well, then serve immediately.
