- 1 cup salted butter (room temperature)
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- 6 tablespoons salted butter (for caramel)
- ⅛ teaspoon salt
- ½ cup light corn syrup
- 1 cup granulated sugar
- 1 cup heavy cream (divided)
- 1 ¼ cups milk or dark chocolate
Instructions
- Preheat oven to 350°F (175°C).
- Beat together room temperature butter and powdered sugar until creamy. Mix in flour and vanilla.
- Press mixture into a greased 9×13 inch baking pan and bake for 20 minutes until lightly golden.
- For the caramel layer, combine butter, salt, corn syrup, granulated sugar, and half of the heavy cream in a saucepan over medium heat. Boil without stirring for about 5 minutes until thickened. Stir in vanilla and pour over the baked shortbread.
- Heat remaining heavy cream until simmering, remove from heat, add chopped chocolate, and stir until smooth. Pour over cooled caramel layer.
- Refrigerate for at least 4 hours before cutting into bars.
