  • 1 lb Ground Venison
  • 8 Tortillas (corn or flour)
  • 2 cups Mexican Blend Cheese
  • 1 cup Tomato Sauce
  • 1 cup Chicken Stock
  • 16 oz Can Refried Beans
  • Various spices (chili powder, cumin, oregano)

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium saucepan, heat olive oil and create a roux by adding flour and spices; slowly mix in the chicken stock and tomato sauce until smooth. Simmer until thickened.
  3. In a large skillet, sauté onions and peppers before adding ground venison; cook until browned.
  4. Mix in refried beans and half of the enchilada sauce.
  5. Warm tortillas briefly; fill each with the venison mixture, roll tightly, and place seam-side down in a baking dish.
  6. Pour remaining sauce over enchiladas and top with cheese.
  7. Cover with foil and bake for 20 minutes; uncover for another 10 minutes until bubbly.
