  • 46 gluten-free tortillas
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 large eggplant (cubed)
  • 6 oz fresh spinach (roughly chopped)
  • Vegan cheese sauce (or vegan cheese of choice)
  • Assorted spices (including paprika and cumin)

Instructions

  1. Prepare all ingredients: dice the onion, mince the garlic, chop the eggplant into small cubes, and roughly chop the spinach.
  2. In a skillet over medium heat, add oil and sauté the onion for about 3 minutes until translucent. Add eggplant, garlic, balsamic vinegar, soy sauce, red wine, and spices; cover and cook for 12-15 minutes until tender.
  3. Stir in spinach and cook for another 30-60 seconds until wilted.
  4. Assemble quesadillas by spreading the vegetable mixture and vegan cheese onto tortillas. Top with another tortilla.
  5. Cook on each side in a greased skillet for about 2-3 minutes until golden brown.
  6. Cut into quarters and serve hot.
