  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 pound 90% lean ground beef
  • 1 (1-ounce) packet taco seasoning
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup salsa
  • 1 (9.25-ounce) bag corn chips (Doritos, plain tortilla chips, or Fritos)
  • 2 cups shredded cheddar cheese
  • Optional toppings: shredded lettuce, diced tomatoes, jalapeños, cilantro, sour cream, salsa

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat 2 tablespoons of canola oil over medium heat. Sauté one diced onion for about 5 minutes; add three minced garlic cloves and cook until fragrant.
  3. Add ground beef, cooking until browned; drain excess fat and mix in one packet of taco seasoning.
  4. Stir in black beans and one cup of salsa; cook for another 2-3 minutes.
  5. Grease a 9×13-inch baking dish and layer half of the corn chips, followed by half the beef mixture and half the cheese. Repeat layers.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
  7. Serve with desired toppings.
