  • 1/4 cup unsalted butter (melted)

  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples
  • Glaze: 2 cups powdered sugar, 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat oven to 400°F (200°C) and grease a nonstick baking sheet.
  2. In a medium bowl, whisk together dry ingredients: flour, baking powder, salt, and cinnamon.
  3. In a large bowl, whisk melted butter and sugar until combined; add egg, vanilla, and applesauce until smooth.
  4. Gradually mix dry ingredients into wet ingredients. Gently fold in diced apples.
  5. Scoop tablespoon portions onto the prepared baking sheet.
  6. Bake for about 10 minutes until golden brown.
  7. Prepare glaze by mixing powdered sugar with apple cider until smooth; brush over warm fritter bites.
  8. Broil for an additional 2-4 minutes for caramelization; let cool slightly before serving.
