  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 10 oz enchilada sauce
  • 14.5 oz diced tomatoes
  • 15 oz black beans
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a large skillet over medium heat, brown the ground beef with onion and garlic until cooked through.
  3. Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
  4. In the prepared dish, layer 4 corn tortillas followed by half of the beef mixture and half of the cheeses. Repeat layers ending with cheese on top.
  5. Bake for about 25 minutes until cheese is bubbly and golden.
