  • 2 lbs boneless skinless chicken breasts
  • 1 tbsp cornstarch
  • 6 mini sweet bell peppers, chopped
  • ½ medium onion, chopped
  • ½ cup chicken stock
  • ⅓ cup low sodium soy sauce
  • ½ cup bourbon
  • ¼ cup apple juice
  • 1 tbsp apple cider vinegar
  • ⅓ cup brown sugar, packed
  • 2 tbsps ketchup
  • 1 tbsp sriracha
  • ½ tbsp minced garlic
  • ¼ tsp minced ginger

Instructions

  1. Marinate chicken strips in cornstarch for at least 20 minutes.
  2. Whisk together sauce ingredients in a bowl.
  3. Preheat the Blackstone griddle to 400-425°F and add oil.
  4. Cook marinated chicken for about 6-7 minutes, flipping halfway.
  5. Add sliced bell peppers and onions; sauté for an additional 2-3 minutes.
  6. Pour sauce over chicken and vegetables; cook until the sauce reduces, about 4-5 minutes.
  7. Serve over rice or cauliflower rice, garnished with green onions.
