  • 3/4 cup whole milk or buttermilk
  • 2 and 1/4 teaspoons instant yeast
  • 3 tablespoons honey
  • 1 large egg
  • 1 teaspoon salt
  • 2 teaspoons fresh sage leaves
  • 3 cups bread flour

Instructions

  1. Brown the butter in a light-colored skillet over medium heat until caramelized. Cool slightly.
  2. In a mixing bowl, combine warm milk, yeast, and 1 tablespoon of honey; let sit until foamy (5–10 minutes).
  3. Add remaining honey, egg, cooled brown butter (reserve some), salt, sage, and 1 cup flour to the yeast mixture. Mix until combined.
  4. Gradually add remaining flour and knead until smooth and elastic (about 5 minutes).
  5. Let dough rise in a greased bowl covered with plastic wrap until doubled (1.5–2 hours).
  6. Shape into rolls and place in a greased baking pan. Allow to rise again for about 30 minutes.
  7. Bake at 350°F (175°C) for 20–25 minutes until golden brown.
