  • 2 tbsp butter
  • 2 boneless skinless chicken breasts or 2 cups diced rotisserie chicken
  • 1¼ cups white long-grain rice (uncooked)
  • 2½ cups chicken broth
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 2 cups fresh broccoli florets
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, melt butter over medium heat, add chicken, season with Italian seasoning, salt, and pepper, cooking until no longer pink.
  3. Stir in chicken broth and bring to a simmer, then add rice and broccoli.
  4. Mix in cream of chicken soup, milk, sour cream, and half of the cheddar cheese.
  5. Transfer to a greased baking dish, top with remaining cheese and crushed Ritz crackers mixed with melted butter.
  6. Bake for about 50 minutes until bubbly and golden brown.
