  • 5 pieces of bacon
  • 1 lb ground beef
  • 1/4 cup butter
  • 1/4 cup onion (diced)
  • 2 sticks celery (diced)
  • 6 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb Yukon potatoes (peeled & diced small)
  • 2 cups sharp cheddar cheese (shredded)

Instructions

  1. Cook the bacon in a large soup pot over medium-high heat until crispy. Transfer to a paper towel-lined plate and leave the fat in the pot.
  2. Brown the ground beef in the same pot. Drain excess fat and set aside on another plate.
  3. Sauté diced onion and celery in the remaining fat until softened.
  4. Stir in minced garlic and flour; cook for two minutes.
  5. Gradually whisk in chicken broth until smooth. Add heavy cream, Worcestershire sauce, diced potatoes, and cooked beef. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  6. Stir in shredded cheddar cheese until melted and creamy. Adjust thickness with more broth if needed.
  7. Fold most of the bacon back into the soup; season to taste.
