  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar, sifted
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In one bowl, sift together flour, sugar, baking soda, salt, and cocoa powder. In another bowl, whisk oil, buttermilk, eggs, food coloring, vinegar, and vanilla until smooth.
  3. Gradually mix dry ingredients into wet ingredients until well combined. Adjust purple food coloring as desired.
  4. Divide batter between pans and bake for 25-30 minutes. Cool in pans for 10 minutes before transferring to a wire rack.
  5. For frosting: Beat cream cheese and butter until creamy; gradually add confectioners' sugar until fluffy.
  6. Frost cooled cakes and assemble as desired.
