  • 4 cups cooked rice (preferably day-old)
  • ½ cup diced white onion
  • 1 cup frozen mixed vegetables
  • 2 large eggs
  • 3 tablespoons low-sodium soy sauce
  • Sesame oil and neutral oil for frying

Instructions

  1. Heat sesame oil and neutral oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned.
  2. Stir in soy sauce, butter, lemon juice, salt, and pepper; set aside once cooked.
  3. In the same skillet, sauté onions and mixed vegetables until soft. Push to the side.
  4. Scramble the eggs in the skillet with the veggies.
  5. Mix in cooked rice and butter; add soy sauce and combine thoroughly.
  6. Return chicken to the skillet; heat everything through before serving.
