- 6 cups cornbread (homemade or store-bought)
- 6 cups Italian bread (cubed)
- ½ cup unsalted butter
- 1 large onion (diced)
- 4 stalks celery (diced)
- 3 cloves garlic (minced)
- 2–3 cups chicken stock
- ¼ cup fresh parsley (chopped)
- 2 large eggs (beaten)
- Poultry seasoning, sage, thyme, salt, and black pepper
Instructions
- Preheat oven to 400°F (200°C) and spray a 9×13-inch casserole dish with non-stick cooking spray.
- Cube the cornbread and Italian bread, then dry them out on a baking sheet for about 10 minutes at 350°F or let sit overnight.
- In a sauté pan over medium heat, melt butter and cook diced onion and celery until softened. Add minced garlic for an additional two minutes.
- In a large mixing bowl, combine dried bread cubes with sautéed vegetables, chicken stock, chopped parsley, seasonings, and beaten eggs. Mix well.
- Transfer the mixture to the prepared casserole dish and cover with foil. Bake for 30 minutes; remove foil and bake for another 20 minutes until golden brown.
- Let cool slightly before serving; garnish with fresh parsley if desired.
